Christmas Frittata

  • 12 eggs
  • 100 grams smoked salmon
  • 100 grams parmesan cheese
  • Handful cherry tomatoes
  • Handful broccoli florets
  • Handful fresh basil
  • 2 spring onion
  • Ghee and/or olive oil
  • Salt & pepper

You'll need

  • Knife & chopping board
  • Large oven proof frying pan
  • Cheese grater
  • Large bowl, whisk & spatula

Here's How

  1. Preheat an oven to 180C, as well as a pan on medium high heat.
  2. Cut the broccoli florets into small pieces, slice the cherry tomatoes in half, grate the cheese, and roughly chop the salmon. Keep aside separately.
  3. Thinly slice the spring onion and the basil, keep aside separately.
  4. Fry the broccoli florets in some ghee or olive oil until cooked but still crunchy, season with salt and pepper and keep aside.
  5. Crack 12 eggs into a large bowl, add ½ tsp of salt and fresh cracked pepper, then whisk together.
  6. Add the all the chopped filling ingredients to the whisked eggs, reserving 1/4 of the parmesan and all of the basil for garnishing. Whisk together gently.
  7. Fill preheated pan with egg mixture. Place in the oven, and bake for 20-25mins or until egg is cooked through/firm to touch.
  8. Remove from oven, serve warm or at room temperature, garnished with grated parmesan, basil, and a drizzle of olive oil.
